Hawaiian BBQ Ribs

For those who were at my Super Bowl Party. You know these ribs were AWESOME! Other than love that I put in here is the recipe.

First part to make it tender I use the recipe and technique modify from Alton Brown Who Loves Ya Baby-Back?

Dry Rub: (for 2 racks pork ribs)

  • 8 tablespoons light brown sugar, tightly packed
  • 3 tablespoons salt
  • 1 tablespoon chili powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon rubbed thyme

Braising Liquid:

  • 1 cup white wine
  • 2 tablespoons white wine vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon honey
  • 2 cloves garlic, chopped

Directions

Preheat oven to 250 degrees.

In a bowl, combine all dry ingredients and mix well. Place each slab of baby back ribs on a piece of heavy-duty aluminum foil, shiny side down. Sprinkle each side generously with the dry rub. Pat the dry rub into the meat. Refrigerate the ribs for a minimum of 1 hour. In a microwavable container, combine all ingredients for the braising liquid. Microwave on high for 1 minute.

Place the ribs on a baking sheet. Open one end of the foil on each slab and pour half of the braising liquid into each foil packet. Tilt the baking sheet in order to equally distribute the braising liquid. Braise the ribs in the oven for 2 1/2 hours.

Since I made over 10lbs. I put all the rib in large deep pan with braising liquid and cover the pan with foil.

Now come the BBQ sauce recipe from my aunt in Hawaii.

  • 1 cup mixed white and light brown sugar
  • 1/2 cup Ketchup
  • 1/2 Kikoman soy sauce
  • 2 tablespoon grated ginger (I used more)
  • 1 tablespoon garlic (I also put more garlic)
  • 1 teaspoon salt
  • 1 teaspoon pepper

Combine all ingredient in a bowl. Brush all over the rack. Grill or broil the ribs until the sauce start to caramelize.

Take the rack down to rest for 5 minutes. Cut the rib into individual pice. Brush again with more sauce then put back on the grill or boiler until crispy on the outside.

Take the ribs from heat and let it rest for few minutes. Put it in you month and NOM NOM NOM!
